Scallops with Pineapple and Fennel

These delicious AND low calorie scallops were marinated in white wine, vinegar, lemon juice and grilled alongside pineapple and fennel.

You will need:

  • 3-4 scallops per person

  • 1 1/2 cups of dry white wine

  • 1 cup of white balsamic vinegar

  • 1/2 cup of lemon juice

  • 1 tablespoon of brown sugar

  • 2 tablespoons of olive oil

  • 1 sheet of tinfoil

  • 1/2 cup of cut fennel

  • 4 rings of pineapple

  • salt, pepper

Salt and pepper scallops and then place scallops in a marinating dish with the wine, lemon juice, vinegar and oil. Let sit for 30 minutes or more (in the refrigerator). Turn on your grill and wait until it is hot. Place foil on the heated grill and add the scallops and fennel with additional salt and pepper. Dust pineapple with brown sugar and add to the foil. Cook for 10 minutes and flip the scallops after 5 minutes.
